RECIPE: Winter Kale Salad with Sun-Dried Tomatoes and a Lemon-Garlic Dressing

This recipe was originally posted on our Recipe Blog in December of 2014. It was perfect for that time of year because it really brought out some bright and vibrant flavors in such a dark and gloomy time of year (can you tell I’m not a fan of winter?). That being said, this is still our favorite kale salad, and is currently a go-to for parties, cook-outs, pot-lucks, you name it. Perfect if you don’t know what to make for 4th of July!
We didn’t want you to forget about this one since kale is flourishing at your local farmers markets these days. And with all the great in-season vegetables this time of year, we have been adding veggies such as cucumbers and carrots, which adds a whole other element of crunch! Still, everyone seems to enjoy this salad regardless of our spontaneous additions. So go shopping for the ingredients you don’t have, use the ones you do, and bring your little cooks to the kitchen to help you massage the kale with salt, and some love. Have fun and enjoy!
