Hard Boiled Egg and Avocado

Sometimes in the morning we are in a rush. We don’t have time for an extravagant breakfast, and we opt for grabbing something (not too nutritious) to go; a cereal bar or slice of toast. Unfortunately, those types of breakfasts are usually packed with hidden sugars and empty carbs. They never keep you satisfied, and you end up going back for another snack soon after. The beauty of this simple, but delicious recipe is that it fills you up and keeps you filled until you are ready for lunch. You get to start your day with good proteins and healthy fats which satisfies your body and hunger. This can be prepped the night before and kept in a to-go container to grab before you leave for work. There are no unnecessary carbs, no sugar, just pure energy at it’s best. This will only take you as long as it takes to boil an egg and peel it, roughly 15 minutes. Make a batch of eggs on Sunday and store for the entire week. Clean. Simple. Tasty. What else could you ask for to start off your day?

What You’ll Need

  • 1-2 pastured eggs
  • 1/2 – 1 whole avocado
  • 1 green onion, chopped
  • small handful alfalfa sprouts
  • sea salt and freshly ground black pepper
  • water for boiling your egg(s)

What to Do

  1. Take your eggs (however many you want to cook) and cover with water in a small-medium sized pot. Put on the stove, uncovered, and bring to a bowl on medium heat. Once the water starts to boil, turn off the flame, cover and let sit for 10 minutes. Drain, cool off with cold water, and store in fridge.
  2. Half your avocado and remove pit and skin. Chop into chunks and add to your to-go container or bowl.
  3. Peel your egg(s) and slice as desired. Add to bowl or container.
  4. Top with onion, sprouts, salt and pepper and enjoy.

Makes enough for 1-2 people. For me, I use 1 egg and a half of avocado and it is quite filling!
