Grilled Peaches & Cream

One of the most memorable moments of summer is biting into a fresh, ripened peach and not caring about the juice dripping down your whole arm. You only get a few weeks nearing the end of the summer when you can get plentiful amounts of locally grown peaches, and we love to take advantage. One of the best ways to eat a peach, is simply as is. Enough said. However, not too long ago, we tried another version that blew us out of the water. It’s not quite as easy, but it is most definitely worth the bit of effort. The method to our madness, or should I say brilliance? Grilled just slightly and topped with a simple whipped cream; that’s it. Let me tell you, if there is one thing you should try this summer, it is this recipe. You will not be disappointed. Enjoy!

What You’ll Need

for the peaches:

  • about 4 peaches, halved and pits removed
  • organic butter
  • 1/4 tsp cinnamon
  • pinch of sea salt

for the whipped cream:

  • 1 pint heavy whipping cream
  • 1 tsp vanilla extract
  • 1 T pure maple syrup

What to Do:

  1. Turn your grill on medium and allow to preheat for about 10 minutes.
  2. Meanwhile,whip together heavy cream, vanilla and syrup with a hand mixer until peaks begin to form, about 5-10 minutes. Do not over whip! Store in fridge to chill.
  3. Prepare your peaches by cutting in half, removing the pit and sprinkling each with cinnamon and a touch of salt.
  4. Smear some butter on the open side of the peaches and place face down on the grill. Try not to move them too much to allow for nice grill marks to form; about 7 minutes*.
  5. Butter the back side of the peach before flipping, and cook on the back for another 7 minutes* or until they are nicely browned.
  6. Repeat with all your halves.
  7. Serve 1 half a peach per person, warm with a dollop of chilled whipped cream.

*Cook time will vary on how hot your grill is; keep checking until browned nicely. We are simply trying to get that smoky flavor which does not take long.
