Gluten-Free Raw Nut Bars

Did you know that aronia berries contain up to four times as much antioxidant power as blueberries? And combined with raw nuts, these bars are just one way you can create a smart snack for you and your kids. Play with the ingredients and make them to your liking.

What You’ll Need:

  • 1/2 cup raw nuts – we used almonds, walnuts, and Brazil nuts
  • 1 T pumpkin seeds
  • 1 T sunflower seeds
  • 1 T raw almond butter
  • 2 T unsweetened coconut flakes
  • 1/2 cup aronia berries
  • 2 T raw honey
  • 1 T coconut oil

What to Do:

  1. Place all ingredients in a food processor and process until nuts are cut into small pieces. If it seems to dry, add some more of the wet ingredients (or a little bit of water). If too wet, add more nuts, seeds and coconut flakes. You should be able to press together and have the mixture stick.
  2. Press nut mixture onto bottom of a square baking dish, and place in fridge for a few hours, or until hard. Cut into desired sized pieces and serve or wrap in plastic wrap and store in fridge for later.
