Chewy Oatmeal Raisin Cookies

When you think about oatmeal raisin cookies, what comes to mind? Heck when you think of the word “cookie”, what do you think of? Probably some combination of flour, sugar, leveling agents, and maybe spices if we are getting fancy. We often revert to the store-bought toll-house “perfect” cookie as our standard; of which we try to replicate each time we bake. But what if the “perfect cookie” is not made with flour at all? What if it is sweetened with real food and made with all organic ingredients? Perhaps it has just the right amount of spice, with some chopped nuts or seeds for some protein boost. Maybe it is not made with butter, but coconut oil, and will have you questioning the way you think about your average cookie. Guess what? This recipe is exactly that. From the simplest recipes made with only three ingredients, to some more complicated ones, I have tested and tried a few different ways to make this oatmeal raisin cookie a real enjoyable food. Rather than fill it with processed flours and sugars, I used fruit and whole oats instead. I’m happy to say this is my favorite recipe for the oatmeal raisin combination so far. If your interested in trying a new version of cookie, then this recipe is for you. Hopefully you can be inspired to try your own combinations, and play around with baking cookies that are filled with whole ingredients you can be happy to indulge in.

What You’ll Need

  • 1 c. rolled oats
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • pinch sea salt
  • 1/2 c. coconut oil
  • 7 dates, pitted
  • 1 heaping T almond butter
  • 1 pastured egg
  • 1 tsp vanilla extract
  • 1/2 c. organic raisins
  • 1/4 c. organic flax seeds, chopped nuts, or coconut flakes (optional)

What to Do

  1. Preheat oven to 350°
  2. In a food processor, blend together all wet ingredients: coconut oil, dates, almond butter, egg, and vanilla.
  3. In a separate bowl mix together oats, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Add your wet ingredients with your dry ingredients and mix well until combined.
  5. Add raisins and flax seeds, nuts or coconut flakes. (Recipe pictures was made with flax seeds)
  6. Scoop small dollops of dough onto cookie sheet, placing about 3 or 4 per row until you have used up all ingredients. This should make about 14 cookies.
  7. Bake in preheated oven for about 12 minutes. Remove and allow to cool a bit. Gotta love a warm cookie!

Makes about 14 cookies
